Explore Belize and the array of unforgettable experiences for travelers.

Archaeology Maya Temple

Belize is a country located on the northeastern coast of Central America. It is the only country in the area where English is the official language, although an English Creole and Spanish are more commonly spoken.

Exploring ancient Maya temples to discovering underwater life to meeting fantastic locals, it is safe to say there are more things to do here than you could possible cover in one visit. Thankfully, you can always come back. Check out all the places, activities, and amazing experiences for you to discover, here in Belize. With reef, beach, and inland activities to choose from, this is where travelers explore and have adventures of their own making. With so much of our natural environment, still healthy and intact, eco-tourism adventures are offered throughout the country.
Birding Tropical Belize

Birding

Over 500 species of feathered friends call Belize home from time to time. Some of the best places to see migrant and resident water birds are Crooked Tree and the seashores of Belize. Like everything else here, you can easily watch birds while doing something else. Going on a zip-lining trip? You may see a toucan. Cruising the Hummingbird Highway to San Ignacio? Pull over and check out a few birds. In Cockscomb Basin Forest Reserve? So are birds. If you want someone to show you birds, our resorts and tour operators offer birding trips that will show you all the birding hot spots. So, no matter if you just want to check out a few exotic birds or you are a full-blown “twitched,” here, all you really have to do is look up.

Caving

Belize cave, they range from easy walks to challenging hikes that can often turn into squeezes, crawls, climbs, rappels and swims. Choose your cave accordingly. In most cases, you will find extensive stalactite and stalagmite formations and pottery shards; others have ancient intact pottery and human remains and other natural formation such as underground waterfalls. Just about the only thing you will not find in our caves is boredom.

Fishing

From spin, to fly, to trolling, our abundance of game fish guarantees excellent sport fishing all year round. In addition, since many rivers empty into the Caribbean Sea, you are practically guaranteed a daily catch. Not to mention the fact that our guides have no problem sharing their own secret spots with guests. Explore Turneffe Atoll, which provides you with some of the most desired areas in the world for fly-fishing. Bonefish permit and tarpon are everywhere here. In fact, Belize is one of few places where you can fish a Grand Slam bonefish, permit, and tarpon all in the same day. How many times do you get to win a Grand Slam on a vacation?

Hiking

As intimidating as some of our trails may look on a map, do not worry. Most are designed in loops so you easily return to your starting point. Some trails are self-guided; some require the expertise of a licensed tour guide who can point out birds, wildlife, and local plants. Whatever level of hiker you consider yourself, we have the trail to match what you are looking for. Take a day tour or spend several days camping either one provides you with the chance to encounter exotic tropical plants and birds, or to see wildlife, including howler monkeys, crocodile, or the tracks of the elusive jaguar and tapir.

Horseback

Horseback in Belize
Horseback riding tours can be arranged through many resorts or tour operators. Popular tours travel through the jungles of the Cayo District, or you can see Maya sites like El Pilar, Xunantunich, and Cahal Pech. In northern Belize, you can find horseback riding at the Mennonite community of Blue Creek. Saddle up and explore unexcavated Maya mounds and the farmlands and planes, stretching across the region. It is a ride you surely will not forget.

Snorkeling

Even if you’ve never snorkeled before, our knowledgeable local guides will help you explore the kaleidoscope of colors found in hard and soft corals, sponges, and over 500 species of  fish and marine life. There are hundreds of snorkeling sites of varying depths along the Belize Barrier Reef. Every snorkel spot is a little different from the other and if you go back to the same spot, each time you will see something different.

Tenerife Travel Guide

Though hardly a well-kept holiday secret, this pork-chop-shaped mid-Atlantic island still has a lot to offer
It is hardly a well-kept holiday secret. Last year, more than 1.6 million UK tourists visited Tenerife with early indications suggesting even more of us will have turned up by the end of 2013. That is more than 4,300 incoming Brits each day: a boggling number for this pork-chop-shaped mid Atlantic island, particularly when you consider that much of its landmass consists of inhospitable volcanic slopes pricked by spiky euphorbia.

So, why do we come? Tenerife is the largest of the Canary Islands archipelago around 130km across at its widest point and built its reputation as a package-holiday destination in the 1970s, when the rapid development of a string of hotels and apartment blocks along the south-west coast began. This high-rise strip  Playa de Las Americas, Los Cristianos and the Costa Adeje now hosts the majority of visitors, drawn by year-round sun, imported white sand and prices to suit every budget.

Do not be dismayed if the prospect of crowds of sunbathers does not sound immediately appealing. This island rewards exploration beyond the tourist resorts. Tenerife's central asset is a dormant volcano, the vast Mount Teide, which rises to 3,718m and is often described as the highest mountain in Spain the Parque Nacional Del Teide is centered on the vast crater at its summit. There are plenty of hiking routes on offer, with information available from the visitors' centre. Wrap up warm, though; the chilly upper slopes of Teide are a marked contrast to the heat of the coast.

Some civic charisma

The archipelago once had an important role as the mid Atlantic staging posts for Spain's colonization of the New World. Santa Cruz, the pretty capital of Tenerife, which lies in the northeast of the island, is where the conquistador Alfonso Fernandez de Lugo planted his holy cross in 1494.

For a real slice of a colonial city, board the Linea 1 tram from Intercambiador, Santa Cruz's main station, and take the half-hour trip to nearby La Laguna. Now a Unesco World Heritage Site, this charming city was the blueprint for Latin American outposts such as Havana and served as Tenerife's capital for 200 years. Tenerife caters for families brilliantly, with some diverting fun parks. One of the biggest and, well, wateriest of them is Siam Park, pictured, near Los Cristiano.

Go coastal

The Canary Islands are well known as places to spot cetaceans, with sightings of bottlenose dolphins and pilot whales often guaranteed by the many boat operators in the resorts in the south-west. If you prefer to paddle your way around the island, Teno Activo runs kayaking and walking adventures, including trips to the pretty beach, which lies at the end of the Masca Gorge, hidden alongside mighty cliffs known as Los Gigantes. There are, of course, plenty of beaches to choose from. You can usually escape from the crowds at Santa Cruz's local option, Playa de las Teresitas, pictured. It is reached via bus 910. This stretches of artificial sand hides below the Anaga Mountains themselves well worth a day trip and offers gentle waves that are perfect for families.

Look north

Much of the northern coast of Tenerife remains relatively undeveloped, with the undoubted jewel being Garachico, pictured a tiny town with cobbled streets, a main square and a small harbour side fort called Castillo de San Miguel. The most striking thing about Garachico, though, is the series of lava rock pools that spills into the Atlantic along the shore. The remnants of a volcanic eruption in the 18th century that tore through the town, the lava have with the aid of some strategic concrete been molded into swimming pools.

La Gomera

Tenerife's green little sister lies off its west coast and offers you a landscape riven by deep valleys, graced with ancient laurel forests, and populated by a culture still renowned for a strange whistling speech called Silbo Gomero. The island makes for a great day-trip via the regular ferries, which run from Los Cristianos to San Sebastian, the capital.

Getting there

Inter-island flights depart from Tenerife North, which is easily accessed from the capital Santa Cruz. More information webtenerife.co.uk

Easy ways to experience Navajo America

Traditional Navajo Hogan
The Grand Canyon. Unique art galleries and boutiques. Stunning golf courses. For travelers, the American Southwest is filled with innumerable attractions. Though it permeates almost every aspect of the regional culture, however, the Native American communities of the Southwest can often seem distant and inaccessible to visitors. In fact, interacting with native communities and cultures is easier than many travelers realize. The Navajo Nation a 25,000-square-mile sovereign state in the high desert of Arizona, New Mexico, Colorado and Utah is a good place to start. The Navajo occupy the largest tribal reservation in the country; the area is home to more than 100,000 Navajo people.

Ride through Monument Valley

A 91,000-acre tribal park on the Arizona-Utah border, the towering red rock pinnacles and bright orange mesas of Monument Valley believed in Navajo mythology to be the carcasses of defeated monsters, buried in the sand offer the most iconic images of the Southwest. Road routes are easy and take in the big viewpoints, but a backcountry tour with a local guide shows you the valley through Native American eyes.

Canyon de Chelly is a dramatic 26-mile gorge near Chinle, Arizona.

It is sacred to the Navajo and filled with ancient petro glyphs of snakes, antelope, and the stark white handprints of medicine men. Deep in the canyon, ruined settlements of the Anasazi predecessors of the Navajo can be found, built high into cracks in the sheer cliffs like vertiginous sandcastles of mud and stone. The views from the top are spectacular but to appreciate the history of the canyon you need to explore inside accessible only with a local guide.

Sleep in a Navajo Hogan

Made of interlocking logs held together with compacted mud and earth, Hogan’s, the traditional home of the Navajo, are still used by many families. They also play an important part in Native spiritual and ceremonial life. Inside, the design is a reflection of the living world: pillars to represent the four cardinal directions, a circular spiral roof for the sky and a door facing east to welcome the rising sun. Spending the night in one is a treat: they are not fancy, but they are comfortable and miles from any large urban area provide a great night of sleep. Discover Navajo, a Navajo Nation culture and tourism organization based in Window Rock, Arizona, has information on overnight Hogan stays on the reservation.

Visit with a medicine man

By looking through a crystal at a pile of hot coals spread out on the compacted earth floor of a Hogan, Navajo medicine men are believed to be able to divine aspects of a patient's life and help them using prayer, chanting and blessing with sacred feathers and arrowheads. Still employed in contemporary Navajo society to heal both physical and mental ailments, traditional ceremonies are powerful expressions of the culture. Many medicine men will not treat non-Navajos, but a few will. Ask around and you may get lucky.

Sleep under the stars

For the ultimate Southwest fantasy, nothing beats riding out on horseback to camp in the backcountry, where you can roast corn on an open fire and listen to traditional Native American stories.

However, the real show begins when the stars come out stargazers lay on blankets and sleeping bags by the embers of a fire while the shining arms of the Milky Way swirl overhead.

Learn about Navajo rugs

Navajo rug weaving is one of the most intricate and beautiful of all the Native arts in the Southwest. Techniques are a closely guarded secret, passed from mother to daughter. The effort involved in making rugs is intense: a single three-to-five-foot rug can take more than 2,000 hours, or eight months, to produce.

Watch the sunset at an ancient cliff village

Sunset at an ancient cliff village
Built into an immense alcove in Betatakin Canyon, 60 miles east of Tuba City, Arizona, a beautifully preserved 13th-century Puebloan cliff village is the centerpiece of Navajo National Monument.

At dusk, the walls glow bright peach and light up a surrounding forest of pinion pines, yucca plants and giant Douglas firs. Short trails to scenic viewpoints include interpretive signage that offers insight into how ancient Puebloan people used everything the desert provided to thrive despite arid conditions. ( Src: CNN)

Working on Your Vacation

You have a vacation coming up, but you’ve been everywhere and seen everything that you wanted to see.  Maybe you have a lot of vacation time amassed and you know you’ve been blessed with material assets that others don’t have.  If so, maybe you should consider going on a Volunteer Vacation.  There are many opportunities available to take an interesting vacation and still make a difference in your world.  You can work in a partner program where you will work side by side with local people to improve their community.  You might work in the area you are most interested in.  Do you have building skills?  Are you a medical professional?  You can be used in various communities both here and abroad to help the disadvantaged get the medical care they need.

Other opportunities are offered all over the world.  You could volunteer in an orphanage, a school, caring for the elderly, or working with people with disabilities.  What ever your interests, there are opportunities for you to make your vacation a volunteer experience.  It will inspire you and make you thankful for all you have been blessed with.

With the natural disasters we have experienced in the past year, many places could use help in rebuilding and cleaning up.  The tsunami relief is still far from being completed.  Many miles of beaches still need to be cleaned and many are still without shelter.  Put your building skills to work to help the unfortunate countries that were affected.

Do you lean more toward ecological projects?  Those can be found as well.  In the past 12 months, a volunteer group has spent many hours rehabilitating sick penguins so they can be released into the wild in South Africa.  Released turtle hatchlings in Costa Rica and cleaning vast amounts of beach area in Sri Lanka.  Other projects include, erecting a fence to protect wildlife in Australia, replanting over 2000 saplings to restore a forest in Kenya and helped preserve Griffon Vultures in Croatia.

If you prefer to work with people, you may be able to help with teaching English as a second language.  One organization has organized a camp to help children fight drug addiction.  Another has taught basic sports skills and helped with educational development for children in underprivileged countries.

Meaningful volunteer vacations can be a worthwhile project for anyone wanting to help the world become a better place.  To promote goodwill and let other countries know that we as Americans care.

The Church I belong to takes a missionary trip every year. They have fund-raising events, and those that go work to raise the money for their travel.  They may go and finish a project started by another church, or start a new project.  The Church that is sending the group often supplies building supplies.  Teens have gone on mission trips to conduct one-week Bible Schools.  My son had the opportunity to go on one of these mission trips and that one trip changed his life forever.  He learned that volunteer work could be rewarding and unforgettable.  There was time for him to visit the local sites and work with the locals on something that was important to them.  He used his experience on that trip to go to a large city here in the States to minister to inner city youths during one of his summer college breaks.

I found many different sites on the Internet that gives you the choice of where you want to volunteer.  Is there an area you have never thought of visiting?  Maybe a news story has made you curious about an area, or stirred your heart, making you want to make a difference.  Can one person make a difference?  The answer is a resounding YES.  You can take projects for as short as one week to as long as 12 weeks.  You choose what will interest you and where you would like to go.

Why not take advantage to see a part of the world you would not have the occasion to visit and change the lives of people in that area.  You can have a life changing experience, a vacation to remember and do your part in working for peace and understanding around the world.

Wine Tours In Spain

The wines of Spain are as accurate a measure as any of the country's refinement and sophistication. Spain is a world class producer of reds, whites, sherry, and champagne. All over Spain, there are roughly 5,500 wineries producing 870 million gallons of wine annually. Undoubtedly, winemaking is a very important part not only of Spain's economy but also of its history. It is, thus, no surprise that Madrid hotels offer guided wine tours to guests. Wine tours give guests the chance to sample different Spanish wines and immerse themselves in Spanish culture, history, and art at the same time.

With so much wine distributed in the countryside, Madrid hotels' wine tours only have room for the best. Below are some of the best Spanish wineries that are frequently included in Madrid hotels' wine tours.

Valdepenas

Valdepenas is one of the most affordable wine regions of Spain. It is, thus, advisable that during the Valedepenas stopover, you buy as much table wine as you can. This area of cold winters and humid summers is home to excellent Reserva and Gran Reserva, two wines that are produced using a hundred percent Tempranillo grapes.

Jerez

The hot and dry southwestern region of Jerez is another historic Spanish wine country. Jerez is the birthplace of sherry, a much underrated wine that may be dry, medium, or ultra-rich.

Rioja

Rioja is the heart of Spain's wine country. Most of the country's most successful vineyards are found in this region.

Navarra

After Rioja, Madrid hotels' wine tours often stop at Navarra next. This is because Navarra is nearer to Rioja. It produces traditional wines, or wines made from indigenous grapes, and modern wines, manufactured through a combination of French grapes and Spanish grapes.

Ribero del Duero

The vineyards of the Ribero del Duero is one of the most picturesque stops of Madrid hotels' wine tours. This region has, in recent years, become as popular a producer of wine as Rioja. It produces wines with a bold fruity flavor. In fact, it is home to the Vega Sicilia, the most famous of Spain's wines made almost entirely from French grapes.

Rueda

Rueda is incorporated into Madrid hotels' wine tours because of one reason: white wine. Rueda is the best white wine region of Spain and the wines made there are made of Verdego grapes and nothing else. You could learn more about the wines of Rueda and other wine regions through sites like http://www.Holiday4You.com/.

You will find out, as the tour progresses, that the wines from Spain excel in both quality and quantity. Though frequently eclipsed in popularity by wines produced in Italy and France, Spain's wines will surely put a grin on the face of even the most discriminating wine connoisseurs. There is no denying or disguising quality, even if you have to travel miles to take a sip of it. As the Romans put it so succintly, “In vino veritas.” In wine, there is truth.

Wonderful Wildwood, New Jersey

The Jersey Shore boasts some of the most crowded vacation destinations going. However, one popular resort, The Wildwoods, is truly a happening place and well worth the trip despite the crowds.

Much of this venerable beach community took off in the 1950s with the opening up of the Garden State Parkway and the Atlantic City Expressway. Many of the hotels still gracing the area still reflect that fifties look: tail fins, big hair, Elvis, and more. Old hotels with a bit of tackiness to be sure, but still a fun place to check out.

The boardwalk is a two mile trek laced with all kinds of stores selling saltwater taffy, t-shirts, trinkets, games, rides, junk food, you name it. If you don't like to walk, tram cars will take you to the end or to any point in between. Soon, you will hear the familiar "watch the tram car" recording emanating from the cars and all you have to do is flag one down, hop on, and you're off.

The beach is free, by the way. And, it is very wide particularly by NJ standards. Most people familiar with the Jersey Shore know that many beaches are razor thin. This beach has sand added to it constantly and naturally by compliant tidal waters; it is at least 1/4 mile from boardwalk to surf [in low tide, that is].

Wildwood now boasts a convention center built on the beach and new rides jutting out from its piers. Historic Cape May, home to more than 600 Victorian houses, is only four miles to the South and a great place to visit when you tire of the boardwalk scene. Atlantic City is one hour to the north and is a frequent side trip destination, especially on rainy days. Alternatively, you can also escape to the county zoo for the day in the town of Cape  May Court House.

The best time to go to the Wildwoods is during July and August as the water temperatures can be too cold before that time. Still, most hotels have outdoor heated pools which you may prefer to salt water.

The resort is changing as many old buildings are being torn down and replaced by condos. Preservationists are attempting to maintain the family welcoming theme of the resort, so it remains to be seen what the resort's future will be. In the meantime, grab a beach towel and your sunblock and head over to wonderful, Wildwood, NJ

Tourist Attraction in Los Angeles

When visiting a city for the first time, most tourists want to ensure that they see as much as possible in a short amount of time. Although traditional guided tours can allow for this, they often do not offer the spectrum of viewing and sightseeing opportunities that a Los Angeles helicopter tour can.
See the Homes and Hangouts of Movie Stars up Close

When it comes to taking tours through Los Angeles, driving through the streets of Hollywood, California can be frustrating. This is especially true when approaching famous locations such as Rodeo Drive, because a few areas in Hollywood may be restricted for vehicular traffic, owing to security and privacy concerns. However, opting for a Los Angeles helicopter tour instead will enable you to see far more famous sights per trip than a drive-through tour ever would. Seeing the sights from above will also be far less stressful because you will not have to worry about the hassle of navigating through some of the worst traffic congestion in the world.

View More Sights in a Single Trip

When driving to various tourist attractions, you may find yourself being limited to visiting one or two spots per day because of time constraints. Deciding to take a helicopter tour instead will enable you to view multiple famous locations in one trip. For example, taking our Hollywood and the Beach Tour will enable you to see a host of sights including the Sunset Strip, West Hollywood, and The Getty Center, the Pacific Palisades as well as the Santa Monica Pier and the beaches around it. If you had to try to see all of these sights by means of a conventional tour, it could take a few days. Opting for our helicopter tour will allow you see these sights and more within an hour or two at most.

Enjoy having your own Personal Tour Guide on Hand

When traveling in a tour group, it can sometimes be difficult to enjoy your trip because each person in the group usually wants to see something different. However, taking a Los Angeles helicopter tour will mean that you are able to see the sights you planned to see without the hassle of keeping up with a large tour group. If you are sharing the tour with a loved one or other family members, it will allow you to spend more quality time together than if you were part of a large group. An added advantage is that if a customer has a special request regarding any of our tour packages, we will be happy to accommodate it wherever possible.

Although some people may enjoy themselves while touring through museums or other well-known tourist attractions, it may make more sense to consider including at least one helicopter tour in your Los Angeles holiday travel itinerary. Our range of tour packages are highly affordable, and we endeavor to provide our clients with the most memorable helicopter flight seeing experience ever.

Affordable Adventure Travel

As summer approaches, families all over the country get into a huddle - what kind of vacation plans do they have this year? In addition, it has to be a special one they think of because it has to make everyone happy. If it is going to cost money, it is going to make the people spending the money - the parents - the unhappiest if the children are always going "So what else is new.” Well, affordable adventure travel could be where your family's zone lies this year.

Let us look at how if you do not have too much money set aside for this year's vacation, zip-lines, rodeos, and golf can be great ideas.

When you were young, adventure travel probably meant that you had to go somewhere off to the mountains and then hike with your family until you were blue in the face. These days, adventure travel tends to be much more entertaining. For instance, try the Appalachian Mountain club. You will find these in New Hampshire. Go here and you will find that it is the perfect place to unwind. You get these mountain huts out in the wilderness in the White Mountains. It is just $30 a person a night. There are lots of free programs and activities for children that they have.

Children just have a romantic idea of the Wild West in them. However, they have probably never been to a place like that. So if you take them there, they are surely going to find it hard to complain of how there is nothing new. The Cody Wyoming National Park and Yellowstone National Park have such a great parade of adventure travel attractions for everybody. How can your children not love barrel racing or nighttime rodeo? In addition, where else can they have a good close-up look at street gunfights, all staged and completely fun?

They have entire villages set up for this. You can get to live there in a little Wild West cabin. In addition, it is just to $150 a night.

Usually, Yellowstone National Park can be a little expensive in the summer. There is a way though to make it adventurous, fun, and still affordable. You just have to use one of their hundreds of camping sites.

Know how when you take a hiking trip, your children absolutely refuse to go hiking? You could turn it into something they cannot help loving. You could turn it into a treasure hunt. At Mt. Hood near Portland, Oregon, at the resort that they call The Resort, they have a great treasure hunting adventure for the whole family, that they call the geo-caching adventure. Your children who never get up off the TV at home are going to be unstoppable here.

Airlines of North America

The airline industry is in a constant state of flux. In 2005, Trans Meridian Airlines quit doing business while EOS Airlines and Maxjet Airways took to the skies. By early 2006, Independence Air quit flying and Virgin America announced that they were seeking U.S. government approval in hopes of taking their first flight. Beyond the U.S. borders, the Mexican airline industry is in the process of being revolutionized as the Mexican government divests itself of interest in two leading carriers. With this particular decision a handful of new carriers are set to take off south of the U.S. border. To keep track of the all the changes involves a ton of work, but I've done the hard work for you. The following list contains all of the current airlines serving the Canada, the United States, and Mexico. Stay tuned…more air carriers are certain to follow while some existing carriers may call it quits!

How many names do you recognize? Some carriers are strictly charter operators while others fly regionally. Still others are very small operators of Cessna aircraft, not what you might consider “airline” aircraft, but in the eyes of the Federal Aviation Administration they are:

•    Aeromexico

•    Air Canada

•    Air Labrador

•    Air Transat

•    AirTran Airways

•    Alaska Airlines

•    Allegiant Air

•    Aloha Airlines

•    American Airlines

•    ATA

•    Avolar Aerolíneas

•    Big Sky Airlines

•    Cape Air

•    Chautauqua Airlines

•    Continental Airlines

•    Delta Airlines

•    EOS Airlines

•    Frontier Airlines

•    Gulfstream Int'l Airlines

•    Hawaiian Airlines

•    JetBlue Airways

•    Maxjet Airways

•    Mesa Air Group

•    Mexicana Airlines

•    Miami Air Int'l

•    Midwest Airlines

•    North American Airlines

•    Northwest Airlines

•    Pace Airlines

•    Pen Air

•    Primaris Airlines

•    Ryan Int'l Airlines

•    Shuttle America

•    Simmons Air

•    Song

•    Southwest Airlines

•    Spirit Airlines

•    Sun Country Airlines

•    Ted

•    United Airlines

•    USA 3000 Airlines

•    USAirways

•    WestJet Airlines

•    World Airways

To keep the list simple, cargo carriers were omitted. Otherwise, operators such as UPS, Kalitta Air, and Emery would have been included.

Contact the carriers directly to find out what schedules they are keeping and airfare information. Perhaps you'll find a "bargain" in the crowd and be able to try out an all new carrier.

Winemaking Secrets of Napa

Sonoma and Napa Counties are known for its fine wines. The golden sun and the abundant soil yield luscious, flavorful grapes. These are then carefully fermented and blended with closely guarded secrets that have been passed on from generation to generation, and perfected—like wine itself—through time.

Visitors to Sonoma and nearby Napa County can arrange wine tours where they can visit different vineyards and learn at least some of the techniques and technology that goes into each bottle. Each label has its own secret, and its own philosophy.

For example, wines can use different kinds of grapes, and vineyards can hold as many as 20 different kinds, each baptized with very poetic names: Petite Syrah, Grenache, Bouschet.

Winemakers study the flavor, acidity, color, fruit intensity, and tannin structure of each grape—which all contribute to a blend’s appearance, complexity and taste. The winemaker’s skill is seen in the delicate orchestra of flavors, as unique to the winery and to the harvest year as a fingerprint.

Some wineries will maintain “genetic libraries” of grapes, which contain different cross-breeding of varieties that allow the experts to experiment with the flavors. This also allows them to employ a technique called micro-vinification. Essentially, the property is divided into vineyard blocks, each planted with a different kind of grape to yield a greater diversity of flavors, aromas, colors and textures.

Soil, fertilization, irrigation and time of planting and harvest can also yield different flavors from a single variety of grape. For example, some vineyards believe that it’s better to minimize irrigation, since it dilutes the intensity of the fruit. This is called “dry farming.” This must be balanced, of course, with the plant’s need for moisture—hence the need to choose an area where the roots can mine the water efficiently.

The flavor can also change according to when the grapes are picked, and the wine experts carefully study the optimum time of harvest. For example, the Zinfandel grape is an early ripener, and must be fermented two weeks before the other grapes that go into what wine aficionados call “Mixed Blacks.”

The grapes must be hand-picked and then put through a special pressing process that preserves the skins and phenolic bitterness. Then, experts must gauge the length of the fermentation process based on the grape’s ripeness and inherent amount of sugar. These are then put into barrels. Many wineries boast of using only the finest containers, such as 100% French oak, which carry the wines for several months before they are bottled by hand.

The bottling itself must be done with great precision and gentleness, and the challenge is to minimize the amount of sulfites and other foreign matter. Some of the wineries use century old techniques, with delicate tools that tap gravity.

These are just some of the secrets of Sonoma and Napa wines. However, to truly understand the science and art of winemaking, it’s best to arrange a tour of the different vineyards. Many of the tours include a “palate class” where experts will point out what flavors to watch out for in each glass, and how to pair a wine with different kinds of food.
